High School: Ellis is a setter who graduated from Days Creek High School with multiple athletic and academic honors. She earned second team all-league honors for volleyball and honorable mention all-league honors for basketball. She was a volleyball, basketball, and softball scholar-athlete. Her volleyball team won the state championship in 2011 and 2013 and was the runner-up in 2012. She won the Most Inspirational Player Award. Her academic honors include being a member of the National Honor Society and receiving the President’s Education Award, Personal Finance Student of the Year, and various awards for math and history.

Personal: Rachel is the daughter of Larry and Paula Ellis. Her hobbies include volleyball, basketball, math, hunting, and fishing. She would one day like to work in disaster relief.

Reason for coming to Simpson: "I chose Simpson to have the opportunity to play volleyball and maybe basketball at a good school in a Christian environment."
